Ingredients

  • 1 bell pepper
  • 3 ounces quinoa (84 g)
  • ¼ onion
  • 1 clove garlic (5 g)
  • 1 tablespoon olive oil (15 ml)
  • 3 ounces 96% lean ground beef (84 g)
  • ½ cube vegetable bouillon
  • ½ cup water (119 ml)
  • 1 teaspoon ground cumin (2 g)

Preparing this recipe

  1. Preheat oven to 400°F (210°C).
  2. Cut off the top of the bell pepper and remove the seeds and white membranes. Rinse the quinoa under cold water. Dice the onion and mince the garlic.
  3. In a skillet, heat the oil and cook the ground beef over medium heat until browned. Add the onion and garlic to the skillet. Sauté until the onion is translucent and fragrant.
  4. Dissolve the bouillon cube in water to make broth.
  5. Stir in the quinoa, vegetable broth, ground cumin, salt and pepper. Bring to a boil. Reduce heat to low, cover the skillet and simmer for about 10 minutes.
  6. Stuff the bell pepper with the quinoa and ground beef mixture.
  7. Place the stuffed bell pepper in a baking dish and bake for 15 minutes until the bell pepper is tender.
