Ingredients
- 3 ounces brown rice (84 g)
- ½ cucumber
- 1 bell pepper
- 3 sun-dried tomatoes
- 1 scallion
- 1 trout fillet, smoked
- 1 ½ tablespoon olive oil (23 ml)
- 1 ½ tablespoon vinegar (23 ml)
Preparing this recipe
- Cook the rice according to the package instructions. Drain and let it cool slightly.
- Dice the cucumber and bell pepper. Cut the sun-dried tomatoes into strips and the scallion into rings. Cut the trout into pieces.
- In a bowl, mix the rice with the cucumber, bell pepper, sun-dried tomato, scallion and trout.
- In a small bowl, mix the olive oil with the vinegar and some pepper and salt to make a dressing. Stir the dressing through the rice salad.
- Serve the rice salad on a plate.
