Salad with green beans, roast beef & egg

Ingredients
- 1 egg
- 2 cups green beans (frozen) (251 g)
- 1 carrot
- 5 radishes
- 1 ½ tablespoon olive oil (23 ml)
- 1 tablespoon soy sauce (15 ml)
- 1 squeeze lemon juice (5 ml)
- 1 handful mixed salad (30 g)
- 4 slices roast beef
- 2 slices bread, whole wheat
Preparing this recipe
- Bring water to a boil and let the egg cook in a saucepan for 6-8 minutes. Then, cool the egg in cold water and cut it into quarters.
- Cook the green beans in a shallow layer of water for 5 minutes. Drain them, rinse with cold water and let them drain.
- Use a vegetable peeler to create long strips from the carrot. Slice the radishes.
- Prepare a dressing with the oil, soy sauce and lemon juice.
- Arrange the lettuce, green beans, carrot strips and radishes on a deep plate. Pour the dressing over them and toss to combine.
- Finally, place the egg quarters and slices of roast beef on top of the salad. Season with salt and pepper to taste and serve with the (toasted) bread.

1. It's delicious to sprinkle some chili flakes over this salad.
