Ingredients
- ½ onion
- 1 clove garlic (5 g)
- 1 eggplant
- 1 tablespoon olive oil (15 ml)
- 3 ounces 96% lean ground beef (84 g)
- 1 teaspoon paprika (ground spice) (2 g)
- ½ teaspoon ground cumin (1 g)
- 6 ounces diced tomatoes (168 g)
- 1 tablespoon tomato paste (20 g)
- 1 egg
Preparing this recipe
- Finely chop the onion. Mince the garlic. Cut the eggplant into small cubes.
- Heat the oil in a large frying pan and sauté the onion and garlic for 2 minutes. Then add the ground beef and spices and cook for another 4 minutes. Add the eggplant, diced tomatoes and tomato paste to the pan and stir everything well together. Let it simmer gently for another 5 minutes.
- Make a well in the center of the pan with a spoon and crack the egg into it. Cover the pan with a lid and let it cook for about 8 minutes.
- Serve the shakshuka with ground beef and eggplant on a plate. Season with salt and pepper.
