Spicy meatballs with green beans & herb mashed potatoes

Ingredients
- ½ pound potato (227 g)
- 3 ounces 96% lean ground beef (84 g)
- 1 ounce cheddar cheese, shredded (28 g)
- 1 pinch chili powder (1 g)
- 2 teaspoons Italian seasoning (4 g)
- 1 tablespoon olive oil (15 ml)
- 8 ounces green beans (frozen) (224 g)
- 2 tablespoons milk, 2% reduced fat (30 ml)
Preparing this recipe
- Peel the potatoes and cut them into equal pieces. Place the potatoes in a pan with plenty of water and bring to a boil. Cook the potatoes for 17 minutes until tender.
- Place the ground meat in a bowl. Add the cheddar, chilipowder and half of the Italian herbs along with some pepper and salt. Mix everything together and form small meatballs with your hands.
- Heat the oil in a frying pan and brown the meatballs on all sides. Lower the heat and cook them through for 10 minutes.
- Prepare the green beans until al dente according to the package instructions.
- Drain the potatoes. Add the milk and the remaining half of the Italian herbs, then mash them with a potato masher into a chunky mash. Season with salt and pepper to taste.
- Serve the mashed potatoes with the meatballs and green beans.
