Stir-fried sauerkraut with chicken, apricots & pumpkin

Ingredients
- 7 ounces sauerkraut (196 g)
- 3 apricots, dried
- 3 ounces chicken breast (84 g)
- 7 ounces pumpkin (frozen) (196 g)
- 1 tablespoon olive oil (15 ml)
- 1 teaspoon curry powder (2 g)
Preparing this recipe
- Rinse the sauerkraut in a colander under cold water. Squeeze it dry.
- Cut the apricots into strips and the chicken breast into cubes.
- Place the pumpkin cubes in a large pot with water and cook for about 8 minutes until tender.
- Heat the oil in a pan. Add the chicken breast and curry powder to the pan and cook for 4 minutes. Then add the sauerkraut and apricots and stir-fry for about 5 minutes. Season with salt and pepper to taste.
- Drain the pumpkin cubes.
- Serve the pumpkin cubes with the stir-fried sauerkraut.

1. Sprinkle finely chopped fresh cilantro or parsley over the sauerkraut.
2. Also delicious with sweet potato instead of pumpkin.
