Ingredients
- 3 ounces tofu (84 g)
- 1 scallion
- 5 cherry tomatoes
- 2 tablespoons almond milk, plant-based (30 ml)
- ½ teaspoon yellow mustard (3 g)
- 1 teaspoon paprika (ground spice) (2 g)
- ½ teaspoon turmeric (1 g)
- 1 tablespoon olive oil (15 ml)
- 1 tortilla wrap, whole wheat
Preparing this recipe
- Press as much water out of the tofu as possible. Crumble the tofu with your hands.
- Slice the scallion into thin rings. Quarter the tomatoes.
- Add the tofu to a small bowl and mix with milk, mustard, paprika, turmeric, scallion, tomatoes, salt and pepper.
- Heat the oil in a pan and cook the tofu mixture for about 4 minutes or until the tofu is golden brown.
- Serve the tofu mixture in a wrap.

1. It's also delicious to add a handful of spinach.
2. If you have a bit more time, it's nice to grill the stuffed wrap for a while.
