Ingredients
- 1 zucchini
- 3 ounces chicken breast (84 g)
- 1 clove garlic (5 g)
- 4 cherry tomatoes
- 2 ½ ounce mozzarella, plant-based (70 g)
- 1 tablespoon olive oil (15 ml)
Preparing this recipe
- Wash the zucchini and make spaghetti strands using a spiralizer.
- Cut the chicken breast into cubes and crush the garlic clove. Halve the tomatoes and cut the mozzarella into pieces.
- Heat the oil in a pan and cook the chicken cubes until done. Add the garlic halfway through.
- Add the tomatoes to the chicken and cook for two minutes. Then add the zucchini spaghetti and cook on high heat for two more minutes.
- Place the zucchini spaghetti in a bowl and scatter the mozzarella on top.

1. No spiralizer at home? Grate the zucchini on a coarse grater or cut the zucchini lengthwise into quarters and shave it into strips using a vegetable peeler.
2. Very tasty with fresh basil.
